Abstract

Introduction: Modifiable nutritional risk factors, allow us to orient local cardio-metabolic prevention strategies based on the promotion of healthy diets.

Objective: The objective of the study was to associate food consumption and cardiovascular disease in a population of an urban clinic in the city of Riobamba, Ecuador.

Methods: It was a case-control study design that corresponded to the relational research level, being classified as analytical, observational, cross-sectional and prospective. The study sample consisted of 210 individuals of both sexes. The Odds Ratio was calculated to determine the association between the consumption of certain foods and cardiovascular disease.

Results: There was an apparent difference in the regular consumption of fruits and vegetables between cases and controls, with percentages of 44.4 % and 55.6 %, respectively, indicating a possible association, although not statistically significant according to the chi-square test (p=0.128). Regular consumption of healthy fats did not show a significant association (p=0.334), although there were variations in the percentages between cases (46.6 %) and controls (53.4 %). Consumption of fiber-rich foods did not reveal a significant association between these habits and the presence of CVD (p=0.077).

Conclusions: The risk estimates for consumption of fruits and vegetables, healthy fats, and high-fiber foods ranged around 1, indicating that there was no significant relationship between these dietary patterns and cardiovascular disease.
